Caramel Nut Coffee Cake

This weekend was General Conference for The Church of Jesus Christ of Latter Day Saints.  

Every six months we get to watch or listen to our prophet and leaders.  Since we didn't actually have to get ready to go anywhere, I decided to make Caramel Nut Coffee Cake for breakfast.  I've had this recipe for years and I can't remember where I got it.


It's probably the easiest recipe I have that uses yeast.  You just dump all the ingredients in the bowl and mix it up. 

Your kids can even help stir:)



Spread it out into a greased pan.




Mix together the topping.



Pour it over the dough.




Bake.



Enjoy!



Caramel Nut Coffee Cake
Batter:
1 3/4 c. flour
2 envelopes Rapid Rise Yeast (4 1/2 t.)
2 T. sugar
1/2 t. salt
3/4 c. warm water
2 T. butter, melted

Caramel Nut Topping:
1/3 c. corn syrup
1/3 c. brown sugar
2 T. butter, melted
1/2 c. pecans or walnuts, chopped

Sugar Topping:
1/4 c. sugar
1 t. cinnamon

Mix batter in bowl. Spread in a greased 9" pan. Sprinkle sugar mixture over batter, then caramel topping. Bake by placing in a cold oven; set temperature to 350. Bake 25 minutes, until lightly browned and firm in center.  Serve warm.


I just realized while typing up the recipe that I did not follow the instructions correctly.  I totally left out the sugar topping and I preheated the oven.  It was still really good.
