Mint Brownie Cupcakes

Last fall I shared my Chocolate Chip Walnut Brownie Cupcakes

Last week I altered the recipe a bit to make Mint Brownie Cupcakes. 




 They were delicious!


Here's what I changed:
In place of mini chocolate chips, I used Andes Mint pieces.

Then for the frosting I added 1/2 t. mint extract. I used my cream cheese frosting, although I'm not sold on the cream cheese flavor with the mint. That didn't stop me from eating them. Next time, I'll try a different frosting recipe.
