Have you tested your thermometer? Place it in a pot of water and bring it to a boil. Check what temperature the thermometer says. Water boils at 212 degrees Fahrenheit at sea level. Google what temperature water boils at your altitude. When I took one caramel apple out of the fridge and allowed it to come to room temperature for about 1 1/2 hours, when I cut into the apple, it was hard. After the caramel was in my mouth for a few minutes it became chewy. I followed the instructions exactly. Is this how it is supposed to be? Do you have any tips? to reduce the hardness. In the past, I have created a box where I placed the apple (still on a piece of the parchment paper, so it doesn't stick to the box) inside, and then placed it inside the cellophane bag. The box only came up partway to the apple, so you could still see it, but it kept the bag from sticking to the apple.
