These decadent fudgy brownies are filled with chocolate, crunchy nuts, and a creamy caramel filling.  YUM!

These yummy caramel brownies are a recipe that I remember my aunt making as a kid. We got the recipe from her and made them occasionally. It was always a special treat, since we didn't get them very often.

As an adult, I don't make them very often either. That's because, when it comes to this dessert, I have NO self control! Like, at all. I will eat them until they are gone.

Brownies that we did get often include rocky road brownies and brownies with white frosting. They were classics in our home and next week (or maybe tomorrow) after you've finished off the pan of caramel brownies, you can try one of them.

How to Make Caramel Filled Brownies

I'll give a quick explanation here, but refer to the recipe below for more details.

The brownie batter is pretty easy. Begin with a German chocolate cake mix, add some butter, evaporated milk and nuts.  Mix it up and then place half of it in a pan and bake for 8 or 9 minutes.

Sprinkle with some chocolate chips and the caramel filling. The caramel filling consists of caramel squares and more evaporated milk that have been melted and stirred until smooth and creamy.

Top with remaining pieces of the brownie batter and continue baking for 15 minutes.

Note: another yummy cake mix brownie recipe are my brownie cupcakes with cream cheese frosting. They're delish! Give them a try.

With most desserts, I love to eat them warm. However, these are definitely better when left to cool completely before eating. It's so hard to wait...

prep time: 30 minscook time: 23 minstotal time: 53 mins

Caramel Filling
  • 1 {14oz} package of caramels - or about 50
  • 1/3 c. evaporated milk
  • 1 German Chocolate cake mix
  • 1/2 c. butter
  • 1/3 c. evaporated milk
  • 1 c. chopped walnuts
  • 1 c. chocolate chips

Caramel Filling
  1. Unwrap all the caramels.
  2. Place in a microwave safe bowl and pour evaporated milk on top. Microwave until melted, stirring after each minute. Depending on your microwave this could take 3-5 minutes.
  1. Mix all ingredients except for chocolate chips together. Batter will be quite thick.
  2. Press 1/2 of the mixture into a 8 1/2 X 11 pan.
  3. Bake at 350 for 8-9 minutes.
  4. Sprinkle on chocolate chips and the pour on the melted caramel.
  5. Then place the rest of your brownie mixture on top. I find that the easiest way to do this is to take pieces of the batter, press it flat with my fingers and set it on top. It's ok if you have places where the caramel doesn't get completely covered.
  6. Bake an additional 15 minutes at 350. Let cool completely before eating.
