Classic Egg Salad - a simple recipe using boiled eggs

Chopped hard boiled eggs mixed with a creamy filling and just a hint of seasonings, makes this a classic go-to recipe to use up hard-boiled eggs.

There's an ongoing argument between those who like mayonnaise and those who like Miracle Whip. I'm one of those rare people who like both just fine. And this recipe uses both. I like the tang of the Miracle Whip, but my husband is not a fan. (Don't tell him that half of the "mayo" in this recipe is actually Miracle Whip. So far he hasn't noticed!)

If you are a staunch supporter of either condiment, simply replace the offending ingredient with the other. Mayonnaise and Miracle Whip are interchangeable in this egg salad recipe.

It's a few days after Easter, and if you're like me, each time you open the fridge boiled eggs stare back at you. What do I do with all those eggs? I make egg salad sandwiches of course! It's a favorite of mine, but I rarely take the time to boil eggs. (I also love deviled eggs, which I'll be sharing soon!)

My recipe is very simple. I don't like a lot of special ingredients or flavors. If you want a jazzed up version of egg salad, you'll have to go elsewhere. This recipe is uncomplicated with basic ingredients.

My favorite way to eat it is on soft white bread.  But it's yummy on wheat too. My husband likes to toast his bread before assembling the sandwich.

How to Make a Simple Egg Salad Sandwich



To begin, boil six eggs. I like to use the Instant Pot for perfect eggs. But you can boil them on the stovetop as well. 

When they're done, peel them, and chop them. Some people like to mash the eggs, but I like the texture of chopped eggs better. It's up to you.

Next add mayo, Miracle Whip and seasonings. (Keep reading for exact measurements.)

Stir it all together and spread some on a slice of bread. Top with another piece of bread and enjoy.

  • 6 hard boiled eggs, peeled and chopped
  • 1/4 c. mayonnaise
  • 1/4 c. Miracle Whip
  • onion powder to taste
  • salt and pepper to taste

  3. Mix together and serve on bread or toast.
