Creamy Tuscan Garlic Shrimp Linguine

Need a quick and easy weeknight dinner? One that has you coming back for seconds? 

Then you've got to try this creamy Tuscan shrimp pasta. It's pure comfort food. 

Succulent shrimp, fresh spinach and al dente noodles, all coated with a delicious garlic parmesan sauce.

CREAMY TUSCAN GARLIC SHRIMP LINGUINE

This creamy Tuscan shrimp recipe has become a family favorite. (Well, except for the one kid who doesn't like pasta)

Some of my children pick out the spinach, but they gobble up the rest of it. It's a great option when you're short on time because it can be made in the time it takes to cook the noodles. 

Pair with a loaf of store-bought French bread for an extra easy dinner.

INGREDIENTS NEEDED FOR TUSCAN SHRIMP PASTA

  • salted butter
  • garlic
  • raw large shrimp
  • flour
  • onion
  • chicken bouillon
  • sun-dried tomatoes
  • half and half
  • baby spinach leaves
  • parmesan cheese
  • parsley
  • salt
  • black pepper
  • linguine or fettuccini noodles
Note: I buy frozen raw shrimp and allow to thaw before making the recipe. I prefer raw because it results in a more juicy shrimp. However you can use pre-cooked shrimp. Be sure not to over cook it or it will become rubbery. Fresh shrimp would be ideal, but I don't live in an area where I have access to it. 
Want a kick of spice? Add a few shakes of red pepper flakes.

HOW TO MAKE  TUSCAN GARLIC SHRIMP PASTA


Bring a pot of water to a boil and cook the noodles according to package directions.

Meanwhile in a large skillet, melt the butter over medium heat. Add the garlic, onion and the shrimp. 

Once the shrimp is cooked through. Remove the shrimp and cover with foil to keep warm.

Add the flour and whisk to combine. Cook for 1 minute.
Add 1/2 cup water and a teaspoon of chicken bouillon. Add 2 T. chopped sun dried tomatoes. Let simmer until reduced by half. 

Add the half and half and bring to a gentle simmer.

Add spinach leaves and parmesan cheese. Simmer until leaves wilt and cheese melts. Add shrimp and cooked noodles. Stir until the noodles and shrimp are coated with the cream sauce. Sprinkle with parsley, salt and pepper.

Sprinkle with additional parmesan cheese right before serving if desired.


Serve with crusty bread or breadsticks and green beans or a fresh salad.
