Homemade Caramel Popcorn (Soft & Chewy Recipe)

I'm going to share my ultimate caramel popcorn recipe. It's soft and chewy and oh so delicious!

It stays soft and perfect for days. Another reason it's my favorite - it's so easy! (No candy thermometer needed.)

HOMEMADE CARAMEL POPCORN (SOFT & CHEWY RECIPE)

I love just about anything made with caramel. Caramel applescaramel brownies, and easy caramel dip are just a few of my favorites.

Because I love it so much, I make this easy homemade caramel corn at home any time of year. In the fall and winter, I love to eat it when it's freshly made and still warm. It's comfort food at it's finest.

It's also great to make in the summer because it just takes a few minutes on the stove top. It won't heat up your house like treats made in the oven. It's an easy recipe to whip up at a moment's notice.

This caramel corn recipe makes big batch, so it's great to share at large gatherings. We have sold it at my kids bake sale.

It's just an all around great recipe to have. It really is the best homemade caramel popcorn!

If you don't want to use microwave popcorn, consider purchasing a popper of some kind.

HOW TO MAKE CARAMEL POPCORN

This yummy caramel corn recipe is so easy to make. 

Begin by popping your popcorn. Pop 4 bags of microwave popcorn, or about 16 cups of popcorn. 

Divide the popcorn into two large bowls.

Tip: To keep the unpopped kernels from getting into your popcorn, pour the popcorn into a bowl. Gently shake it to allow the kernels to fall to the bottom. Then scoop the popcorn out with your hands and place it in another bowl.  This is one extra dish to wash, but so worth it so you don't crack your teeth on an unexpected hard kernel!

Place the butter, brown sugar and corn syrup in a medium saucepan.

 Bring to a boil over medium-high heat and boil for 2 minutes. Then remove from heat.

Add the sweetened condensed milk and the vanilla.

 Stir to combine until smooth and creamy.

Pour half of the caramel over each bowl of popcorn.

Stir with a wooden spoon until the popcorn is evenly coated.

Store at room temperature in an airtight container. (I usually just place plastic wrap over the bowls.)

It's so easy, anyone can make it! It's only six ingredients and no candy thermometer is needed.

Enjoy the ooey gooey goodness of freshly made caramel popcorn! Eat it straight from the bowl, or make caramel popcorn balls. It's the perfect treat whenever that sweet tooth calls.

    1. Yes, it could definitely be cut in half. The only problem would be that you will have a half of a can of sweetened condensed milk that isn't used. You could refrigerated it for later use, or just toss it.

    1. The popcorn does not stay crisp. Once you add the caramel it becomes soft and chewy.
