Pumpkin Chocolate Chip Muffin Recipe

Pumpkin chocolate chip muffins are one of my favorite fall treats. These delicious muffins whip up quickly and fill the air with the most pleasant fall baking aroma as they bake.

With ingredients like pumpkin, cinnamon, cloves and chocolate chips these moist muffins are so tasty you will definitely want seconds.

PUMPKIN CHOCOLATE CHIP MUFFIN RECIPE


 Have you ever walked through the bakery department of a store when they are baking something? 

And you're just dying to have whatever it is hot out of the oven?

I have, plenty of times. It's always disappointing to know that by the time it's ready to purchase, it's no longer warm from the oven.

One of the reasons I love baking so much is that smell that fills the house. It's so homey and comforting.

Especially this time of year. Pumpkin season is the best!
Another reason I love baking so much - I get to eat the finished product while it's still warm.

There's nothing better on a chilly fall evening than warm apple crisp, fresh pumpkin chocolate chip cookies,  warm zucchini bread, or fresh pumpkin muffins with gooey chocolate chips in every bite. I can't get enough of these fall flavors.

INGREDIENTS NEEDED FOR CHOCOLATE CHIP PUMPKIN MUFFINS

(exact ingredient measurements and recipe is at the end of the post)
  • shortening (I use butter flavored)
  • sugar
  • canned pumpkin (use pure pumpkin puree, NOT pumpkin pie filling)
  • eggs
  • all purpose flour
  • salt
  • baking powder
  • cinnamon
  • cloves
  • nutmeg
  • chocolate chips 
Notes:1.  I have had good results replacing butter for the shortening. When using butter increase the amount to 3/4 cup.

2. You can use 2 1/2 teaspoons of pumpkin pie spice instead of 1 teaspoon ground cinnamon, 1 teaspoon cloves and 1/2 teaspoon of nutmeg.
3. I prefer milk chocolate chips, but semi sweet or dark chocolate is fine too.

 Let's get started making the best pumpkin chocolate chip muffins! 

Begin by creaming together the shortening and sugar in a large bowl. Once the sugar is well incorporated, add the pumpkin and eggs. Mix just until combined.

Add flour, salt, baking powder, and spices.

Lastly stir in the chocolate chips into the muffin batter.

 Place paper liners in the muffin pan. Spray with cooking spray to prevent sticking. Add a scoop of batter into each of the muffin cups.

Then sprinkle more chocolate chips on the top of each muffin.
Bake at 350 for 20-25 minutes.

I use the same recipe for these muffins as I do to make Pumpkin chocoalte chip bread. The only difference is the baking time, which is much shorter, which means we get to eat them sooner!

HOW TO STORE PUMPKIN CHOCOALTE CHIP MUFFINS

Pumpkin muffins are easy to store. Simply place them in a single layer in an airtight container and store them at room temperature. 

Pro tip: Add a paper towel under and on top of the muffins to absorb extra moisture.

HOW TO FREEZE PUMPKIN MUFFINS



Place them in a single layer in a large freezer bag and toss in the freezer.
