Almond Poppy Seed Muffins with Lemon Glaze

These poppy seed muffins are soft, fluffy and moist, they have a hint of almond flavor and are topped with the perfect lemon glaze. They rival bakery muffins in taste and quality.

I have been on the hunt for the perfect poppy seed muffin for a while now.  I've tried many recipes and I finally figured out THE perfect variation.

Getting to this point took a lot of trial and error. Some versions were dry and crumbly. Some were too dense. I had almost given up, but I finally nailed it.

  • butter
  • vegetable oil
  • sugar
  • egg
  • vanilla greek yogurt
  • vanilla extract
  • almond extract
  • salt
  • baking powder
  • baking soda
  • flour
  • poppy seeds

HOW TO MAKE POPPY SEED MUFFINS

Muffins whip up in a hurry. I like to gather all the ingredients first. Then it's really quick to add them and mix it all up.

There are a few rules that generally apply to muffins. Begin by combining the sugar and the fats. Then add the wet ingredients and mix. Lastly add the dry ingredients and mix.

  1. Add softened butter, oil and sugar in a large mixing bowl. Using hand mixer, mix until sugar is completely incorporated into the fats.
  2. Add yogurt, eggs, vanilla extract and almond extract. Mix thoroughly.
  3. Add flour, salt, baking soda, baking powder and poppy seeds. Mix just until flour is mixed in. Do not over mix.
  4. Add muffin liners to pan and spray with cooking spray.
  5. Scoop batter into muffin pan, filling each cup about 3/4 full.
  6. Bake at 375 for 18-20 minutes.


HOW TO MAKE THE LEMON GLAZE

  1. Combine powdered sugar with lemon juice and mix well.
  2. Drizzle over muffins with a spoon.
Tips for adding glaze:
Adding the glaze to hot muffins will melt the glaze and it will soak a bit into the top of the muffin.  If you would like a more defined layer of icing, wait until the muffins have cooled to add the glaze. Either way is yummy, it just depends on your preference.

Ingredients

Muffins
  • 1/4 c. butter, softened
  • 1/4 c. vegetable oil
  • 1 1/4 c. sugar
  • 2 eggs
  • 1 1/2 c. vanilla greek yogurt
  • 1/2 t. vanilla extract
  • 2 t. almond extract
  • 1/2 t. salt
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 2 1/3 c. flour
  • 2 T. poppy seeds
Glaze
  • 1 c. powdered sugar
  • 2 T. lemon juice

Instructions

Muffins
  1. Mix together butter, oil and sugar until well combined.
  2. Add eggs, yogurt, vanilla and almond extract and stir.
  3. Stir in flour, salt, baking powder, baking soda and poppy seeds. Mix just until combined.
  4. Fill well greased (or lined) muffin tins about 3/4 full.
  5. Bake at 375 for 18-20 minutes.
Glaze
  1. Add powdered sugar and lemon juice to a small bowl.
  2. Mix together until powdered sugar is absorbed by the juice.
  3. Drizzle over muffins while hot for a glaze that soaks into the muffin. Or drizzle over muffin once cooled for a more defined layer of icing.
